Jacopo Poli
Master class
Poli Grappa R-Evolution
This masterclass will present the history and philosophy of Poli Distillery – one of the most iconic names in the world of grappa. Participants will be transported to Schiavon, near Bassano del Grappa, where in 1898 Jacopo Poli’s ancestor founded the family tradition. During the masterclass, the unique technology used by Poli Distillery in crafting its spirits will be explored – fully copper alembic stills with a discontinuous proccess, working with fresh grape pomace to ensure the purity and expressiveness of the distillate.
The focus will also be on the concept of “R-Evolution” – the transformation of grappa from a traditional drink into a refined digestif with international recognition. It will demonstrate how aging shapes a smoother and more complex profile, approaching the style of cognac and whisky.
At the heart of the experience will be the evolution of taste – from young and fresh distillates to aged, multi-layered, and elegant interpretations, which will include:
- Gran Bassano Rosso Vermouth
- Grappa Bassano Classica Bianca
- Grappa Sarpa Oro di Poli
- Grappa Cleopatra Moscato
- Grappa Cleopatra Amarone
- Elisir Camomilla
- Herbalis – Amaro Officinale
Join us to immerse yourself in the richness of flavor and aroma of fine grappa.
April 25 (Saturday) from 5:00 PM to 6:15 PM
The masterclass will be conducted in English without translation.
NOTE! The master class ticket does NOT provide access to the exhibition! To participate in any of the master classes, you must have an entrance ticket to Discover.Vino on the same day!
Jacopo Poli is the owner, heir, and driving force behind the world-renowned Italian Poli Distillery. He represents the fourth generation of the Poli family and is considered one of the most influential contemporary producers of grappa in Italy, serving as a leading figure in modern, high-quality Italian grappa. Born in 1963 in Bassano del Grappa, he grew up in the distillery and took over the family business alongside his brothers and sister, continuing the artisanal production methods. As an innovator, he transformed grappa from a “peasant drink” into a refined digestif recognized worldwide. Under his leadership, traditional copper stills and the freshest raw materials are used, combining experience accumulated over generations with a modern vision of quality. He also contributed to the creation of globally renowned products such as Grappa di Sassicaia, aged in barrels from the famous wine, and the Sarpa di Poli series.
Jacopo is the founder of the Poli Museo della Grappa in Bassano del Grappa – a museum that traces the history of distillation in Italy and showcases how heritage and craftsmanship are passed down from generation to generation.
